Monosodium glutamate (MSG) is a flavor enhancer and is used my many restaurants. Although the Food and Drug Administration (FDA) has classified MSG as a food ingredient that's "generally recognized as safe," the use of MSG remains controversial. Over the years, the FDA has received many reports of adverse reactions to foods containing MSG. These reactions - known as MSG symptom complex - include: Although researchers have found no definitive evidence of a link between MSG and these symptoms, they acknowledge that a small percentage of people may have reactions to MSG. Andales spent more than a year working with our suppliers to get rid of the MSG in our food. Although we have never added MSG, we discovered that it was in some of the ingredients we were using. Finding MSG-free ingredients was not easy. We had to find new sources and push our suppliers for more information than they sometimes had readily available. As you might suspect, MSG-free ingredients are not as common and, as a consequence, sometimes cost more. We already have established a tradition of using fresh ingredients, prepared from scratch daily, a "more expensive" way of preparing restaurant food, so the inclusion of MSG-free ingredients was an obvious choice to make. Recently we had a prospective diner come in who has severe reactions to MSG. When she inquired about our food and we told her what we had done, she beamed with joy.
